For those interested I did butter chicken yesterday with some measurements.
Chicken in tandoori masala for a couple of hours then whipped youghurt for three more.

The butter chicken masala, cloves
Bay leaf, cinnamon and mace, green cardamom and kashmiri chilis. Coriander, cumin, white pepper and mustard seed.

Toasted the first five for a while and added the second

Broke them a bit in a mortar and pestle. The gravy gets strained so no need to worry about big pieces

Really ripe plum tomatoes

Chopped

Started a bunch of onion and garlic in ghee and oil and added the masala.

Added tomatoes and cooked down. Added some chicken stock and Kashmiri chili powder.

Blended it in batches

Strained

Returned to the pot. See how silky

Added half a stick of butter, julienned ginger and long red chilis

Grilled the chicken hot

Chopped the chicken and added to the gravy, about a cup of heavy cream, and saffron steeped in hot cream.
Some turbinado sugar and some honey to taste at the end
Oh yeah, there was a small can of tomato paste in there too. You can also add a bit of ketchup
After all this..no finished pics

Steve
