well this morning I deboned the 6 lb duck and the 14 lb turkey. I left the leg bones and the wings in for presentation. It was not to very bad of a job to do. I did a basic stuffing and then pulled a little for the chix breast that I pounded out flat and then filled with the stuffing that was mixed with some La Bomba, thank you Little Steven then I used my new micro plane from LC to grate some orange zest into another bowl of stuffing and that was for the duck. then all was rolled together and I used fire wires to lace up and hold the parts altogether. that worked perfect. It was finished up with Kona rub from Richard. so thank you all my egging friends for having a part in our Christmas dinner I will post pics tomorrow when we cook it,

the two breasts, the duck and the turkey pre boning

duck all boned. I only nicked a small hole in the skin

the turkey laid out and ready

all laced up

this will go on the egg indirect in the morning for about 5 hours. I will post more pics of it tomorrow night. I also have a few flip videos of doing this and if I can figure out how to post them I will.
