I bought some Greenwise bay scallops from Publix and made some Coquille St. Jacques...another recipe that I've been making for 100 years.
Just sauteed some onions, mushrooms and garlic in butta... cooled that and stirred in the scallops. Into the scallop shells and topped with alittle panko and fresh thyme.
I found a piece of salmon in the freezer, so egged that, too along with corn. The salmon was marinated in alittle italian dressing, and it was delicious.
We have been having tremendous sunsets. About 15 minutes before this picture was taken, there was a giant thunderstorm happening.
