Good morning,

I'm new to using The Big Green Egg. I purchased it to mainly smoke briskets. I use a Thermo Pro probe that I clip to the grate. Do I rely on the Big Green Egg temperature or the probe temperature that is attached to the grate? The grate temp is quite a bit higher than the Big Green Egg temperature. Which reading do I use to smoke a brisket?
