In NC, there are primarily two versions, eastern and western. Western (or the Lexington style) is much like the one you posted (includes ketchup). Here's a post (with recipes) from years ago from a guy who used to live there and recreated sauce/slaw recipes after he moved away. Looks like every pic I've ever seen of Lex style. e/p1

I prefer the eastern NC versions with no ketchup.

KFC recipe for slaw...

½ cup mayo
1/3 cup sugar
½ cup milk
2 ½ tbls lemon juice
1 ½ tbls white vinegar
½ tsp salt
1/8 tsp pepper

8 cups cabbage
¼ cup carrot (1 small)
2 tbls minced onion (1/2 small)


Mix everything but the cabbage, carrots and onion, then add the veggies, finely chopped please.
Cover and refrigerate

Here's my sauce (much like Elder Ward's on the Whiz's site)
1 ½ cups white vinegar
1 ½ cups apple cider vinegar
1 ½ tbls sugar
1 ½ tbls red pepper flakes
1 ½ tbls bottled hot pepper sauce
1 ½ tbls cayenne pepper (can use less… or none)
Salt and pepper to taste
