Just outta boredom and more boredom, I decided to try this chicken, my first time making it.

The recipe:

I rubbed both sides of the boneless chicken thighs with homemade rub. De-seeded the jalepenos and stuffed with cream cheese and layed them cream cheese side down on the chicken.

Flipped and rolled them,...wrapped in bacon, and hit with more rub.

First time using a muffin tin, but it worked well. Even though the chicken thighs were too big for the muffin tin, it still helped to hold the shape. No toothpick or worry about the bacon coming undone. THUMBS UP, GOOD IDEA!

Lil butta on top!
While I was at it, I made 2 regular ole ABT's to go along with~

2 hours at 300 degree dome indirect, with cherry wood smoke~

I took them off the muffin tin and let them egg direct for about 10 minutes. I skipped the sauce, as I thought it would be overkill.

I didn't even get a chance to plate them, almost gone!

OM goodness, these were wonderful. Should have made more
than 3 of them, but didn't know if the picky eaters I hang
out with would turn their nose up at them.

These are a definite DO OVER! Delish! And worth the trouble.

Thanks for lookin!

Egging since 1996.

Diamonds are a girls best friend, the EGG is a close second!
