Sounds like you got some good ones. Chuck Short Ribs usually have a membrane along the back of the bone which can be removed by carefully using a thin butter knife to peel up one end of the membrane and then using a paper towel to grab it and peel it all off. Takes a little practice, but gets easier.

Here is a video example. He uses a fork, but I have always used a thin butter knife and it makes it easier.

I prefer getting the whole slab of ribs without the butcher cutting them into small bones. It probably depends on how you are going to eat the ribs, though.
