This article about Seasoned vs. Dirty BBQ Pits in Texas Monthly is an interesting read.

https://www.texasmonthly.com/bbq/barbecue-myth-seasoned-smokers/?utm_campaign=This+Week+in+Texas+-+E ditorial&utm_source=hs_email&utm_medium=email&utm_content=78561067&_hsenc=p2ANqtz-8_OW64qEnVJGFRJNbD yPaO6G6cN-RQx9kgSvzr4WiOd7EakVnEiczbM_r3YW0b5HAthpX4YXV2EW7dRkoFW88R3NjCBPF2XvfIluGXrTpNtKn03TI&_hsm i=78561068&fbclid=IwAR3OuUtMTd9wy4zS8kAmqkAPDWNJ5aH4pnwpYfA5yvDKyNxADvObtrOT9Y8

We've all eaten in regular restaurants, and none of us would eat in one that the stove or griddle was 'dripping in grease.' So why would we eat in a BBQ joint that has never once cleaned their BBQ pit?

Something to think about, for sure.

I think I'll do another 'clean burn' on my Eggs.
