I've always understood that if you cook the stuffing outside the bird, and with a healthy dose of turkey stock, it will be safe and will taste like it's supposed to taste. Dunno, never tried it. An extra step, gotta buy extra turkey parts for the stock and then you have to make the stock. Seems like it should work though. I have a clone recipe for stovetop stuffing. Haven't made it in a long while. Don't really remember whether or not I liked it, but I think so. Low sodium.

I tried Max Rosen's turkey once, at Mom's house, in her oven. It was great, even without an egg! For the last 10-12 years, that's where I've been for Thanksgiving and Christmas. But someone else has done the cooking. Mom's gone now, Dec 1 last year (at 102+ years old!), so I'm not even sure where I'll be for the holidays this year, probably NYC with my boys. Almost assuredly not near an egg though.

Might just stay home and order out for pizza.
