My mom always made it homemade, and stuffed it inside the bird. Now I make it her way:

Saute alot of chopped onions and celery in butter.
Add S&P.
Toast abunch of your favorite bread. (on a cookie sheet in the oven works best)
Mix all together with an egg or two and some chicken or turkey stock til it sticks together into a ball when you squeeze it.
Season with fresh or dried sage or whatever you like.
Stuff it in the bird.

We never got sick from stuffing it inside the bird.

Now I make it in a separate dish because we have been spatchcocking the turkey on the egg for the last several years. The turkey comes out great, the stuffing will never be the same. Oh well.

FYI, Pepperidge Farm stuffing in the bag comes out pretty good, too.
