I read something recently that said the old pickle barrel dills were processed differently than the jarred ones. They're fermented and kept in barrels, but they're not the kind that you buy in a big jar at the grocery store. Those have simply been briefly cooked in a brine. "I read it on the internet so it must be true".

I think I'll try a jar and see how long they last before I get food poisoning.
