Don't over think it, Q.

All you need is:

onions and garlic

Chorizo (Spanish, if you can get it)

rice, short grained

protein of choice: I use chicken that has been browned in the pan using EVOO, and shrimp or scallops, but whatever you want

chicken or seafood stock

saffron threads

frozen peas


green olives

Cook your onions and garlic in EVOO, throw in the sliced up chorizo

Add in the rice and let that get all happy~

Next add stock and saffon threads. Let it cook a little. Add back in the chicken and then add the shrimp towards the end. Add in the peas, pimento and green olives.

Wha La!

If you need the measurements, let me know. It's a hard dish to mess up. Give it a try.
