Paella is a wonderful party dish, don't let it intimidate you.
Been doing them since the early '70's. My ex was taught in Brazil while family was stationed at the embassy.
Here are a few for ideas.
Just be sure that after you get to temp, the bottom is closed so as not to burn the bottom of the dish.

On my bucket list:
Rice, Paella, Party, Richard Fl

This recipe is to be done the next time I cook paella.

Peppadew is the brand name of sweet piquanté peppers (a breed of Capsicum baccatum) grown in the Limpopo province of South Africa.
