About a year ago, perhaps even longer, I bought a paella pan. Still hanging on the rack, unused. For some reason, the thought of doing paella intimidates me. Anyway, yesterday, I was looking for a Good Eats episode on YouTube and happened upon AB's paella show. If you can get past Alton's usual nonsense and get to the actual cook, it's not so bad after all.

I thought I'd post this here in case there are others like me who haven't tried it yet, but want to. I just finished watching the vid so, no I still haven't done it. But at least now I know how.

AND... AB says I can even use my Weber if I want to! Which brings up one question... what temp do you paella peeps use? Dome closed, I presume?

Oh, and if any of you experienced people have any alternative suggestions to what he says, including favorite ingredient combos, please feel free to chime in.
