Made some gyro meat ala Chef John, Food wishes. Ground and pressed lamb and beef with onions and spices together in a glass baking pan with another on top. Pressed in fridge overnight
Next day on the egg at 250 degrees until internal temp 160.
Back in the fridge overnight to firm back up. Sliced and browned in fry pan
Here are the fixings.
On a pita bread with lettuce feta cheese tzatziki sauce and pickled red onions

Frankly the meat was a little to smokey and a bit over cooked. Not a big fan of pita bread also, but the better half won, of course 😃, so that's what we had 😎. I would suggest a try. ><(((°> ><(((°> ><(((°>
