Making baby backs for she-who-must-be-obeyed for tonight.

20 of my wife's co-workers coming over Saturday so I've got two eight pound butts, 20 chicken thighs, and a few salmon filets for the pestarian in her office.

found guava jam in the market lately, seems we are getting tons of foods ive never tried. been making what i call jamaicanmecrazy ribs with it. dizzy pig pineapplehead rub, dizzy pig ghost rub. then a glaze of guava jam, ketchup, minced garlic, minced scallions, chives, ginger, and scotch bonnet peppers. been increasing the scotch bonnets every week

got a rack of "dino" beef ribs to egg Sunday, weather permitting. Will be a first go at dino ribs.

Well, Sir...today I started a pork tenderloin on a 54 hour brine in ClayQ's famous canning salt and white sugar brine. That's for Sunday night's dinner. Should knock our socks off!
