Grilled Chilean Sea Bass
Grilled Chilean Sea Bass
  • 1 lb filet of Sea Bass
  • 1 tsp micro planed ginger
  • 1 tsp micro planed garlic
  • Zest from one lemon micro planed
  • Lemon juice from the zested lemon
  • 2 TBL avocado or olive oil. Other oils will work
  • 1 TBL butter
  • White wine
  • Tony Chacheres or a blackening seasoning
  • Salt and pepper
  • Grilling basket

Have egg ready at about 500 degrees direct heat.

Place oil and butter in skillet over med heat. Add garlic, lemon zest, ginger, salt and pepper, and several shakes of Tony Chacheres. As this heats add white wine, about 2tbl at a time and let the white wine evaporate. Add white wine in this amount about 3 times. After adding white wine for the last time make sure you cook the wine down. Dont burn this and if you think its getting to hot add more wine and simmer down and reduce heat. You should end up with just a couple TBL of well seasoned oil add juice from the zested lemon and remove from heat.

To the sea bass apply salt and pepper and some Tony Chacheres or blackening seasoning. Baste fish on one side and then place the fish in the basket and baste the other side.

Place the girl basket over direct heat and grill on one side for about 3 minutes. Flip fish and baste. Cook another 3-4 minutes and flip and baste. Do this until the internal temp on the fish is about 135 degrees. Remove and let rest for about 5 minutes and enjoy.
