Carolina Style Pulled Pork - Sauce and Slaw(Vinegar Sauce & Slaw)
Description:This process has resulted in pork butts that received rave reviews at three Eggtoberfests (2002-2003-2004). It requires a lot of preparation, but will produce some of the best pulled pork you have ever tasted.
Ingredients:
• Cup Cup Apple Cider Vinegar
• Cup Cup Bottled Water
• Oz Oz Ketchup
• Cup Cup Firmly packed brown sugar
• tsp tsp Kosher Salt
• tsp tsp Hot Red Pepper Flakes
• tsp tsp Freshly Ground Black Pepper
• tsp tsp Freshly Ground White Pepper
Bag Slaw Mix
Instructions:Combine all ingredients in a nonreactive medium size bowl and whisk until the sugar and salt are dissolved. Taste for seasoning, adding sugar or salt as necessary; the sauce should be piquant but not quite sour.

Note - the sauce will get hotter within a few days. Make it fresh every few days.

Mix some of the vinegar sauce with the slaw and serve on the side.

Don't know how this recipe got so screwed up. I am not at home now but I have an older copy of this recipe and it is great. I can't remember of the top of my head how many cups and ounces it calls for from each ingredient but I will check.
