Chicken and Steak Fajitas

The following recipe is a quick and easy way to do a large batch of fajita ingredients on a Big Green Egg.

  • Flour Tortillas (low fat)
  • Skirt Steak
  • Chicken Tenderloins
  • Chulula Hot Sauce
  • Dales Low Sodium Marinade
  • Lime Juice
  • Fresh Cilantro
  • Montreal Steak Seasoning
  • Olive Oil
  • Salt
  • Pepper
  • Bell Peppers
  • Sweet Onions

Big Green Egg (other smoker, grill, or even oven will work) with 4 loaf pans on the grate (on top of the fire ring). Medium amount of Natural Lump Charcoal at 315-400 degrees for about 15-25 minutes.

Notes:Total Cook/Prep Time: About 1 hour (or 2 episodes of your favorite reality program) Feeds: 2 lumberjacks, 4-5 hipsters, 1 family, or a party of guests if you triple the meat (the loaf pans have room for it)
