Jerk Marinade (Dirty Chicken)
Ingredients:
  • 1/2 cup ground Allspice
  • 1/2 cup+ brown sugar
  • 6 to 8 garlic cloves
  • 2 scotch bonnet peppers (habaneros)
  • 2 bunches scallions
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 chunk of ginger root (about the size of a thumb)
  • 2 tablespoons soy sauce to moisten
  • Salt and pepper to taste
Instructions:

Mix all together in a food processor. Marinate meat at least overnight. I use ZipLoc bags so I can massage it all around.

Notes:

Add some beer to thin out if the consistency is too thick.

I remove some of the seeds and veins from the habaneros to bring the heat down.

Works with chicken, beef, or fish. I use boneless, skinless chicken thighs.
