Description: | Many variations of these lovelies can be made. Just have to balance the sweet of the dates and balsamic with the saltiness of the nuts and cheese. These disappear even before the ABT\'s at any of my dinners!! |
Ingredients: | 24 pitted Dates - prefer the meatier, firmer ones)
12 slices bacon - halved
48 Roasted Almonds - (smokehouse, spiced, or even plain skinless)
Sweet Balsamic glaze or reduction - can be bought as such. varieties tried are truffled dark and rose as well as home-made which is very easy to do)
Cheese - Any Sharp yet creamy cheese such as a Blue or Chevre |
Instructions: | Remove the pits from the dates if not already done and insert 2 almonds into the cavity. Wrap the dates with a 1/2 slice of bacon and toothpick into place (serves as a nice handle once cooked and still hot). Cook with a raised grid or indirect until the bacon is lightly browned all around the date. Serve on a platter drizzled with the Balsamic glaze and broken up pieces of the sharp creamy cheese dotted all about |
