Ingredients: | 1 shallot , about 40 grams
400g of asparagus, grilled to perfection on the BGE
15 grams butter
10 grams olive oil
50 grams chicken or vegetable stock
1 tsp salt
few grinds pepper
150 grams milk, up to 250 grams if required for correct viscosity

Instructions: | Chop shallot speed 7 for a few seconds. Add oil and butter, 100 C for 3 minutes, speed 3 or so. Add asparagus in 1 inch pieces, 100 C for 10 minutes speed 3. Add stock, cook 3 minutes 100 C speed 3. Salt and pepper. Add milk. Let cool to 50C, then turbo or 10 for 40 seconds. Squeeze of lemon. |
