Cinnamon-rubbed Loin Lamp Chops with mashed sweet potato

Direct grill cooking @ 550 degrees. Figure 3 loin chops per person. Total prep and cooking time 60 minutes +/-. BGE version adopted from Chef Rocco DiSpirito \"reason to season\" recipe. Cook for 3 minutes fiest side and then flip and continue cooking @ 550 degress for another 3-5 until 130 degrees for med-rare ( I used used a wireless thermometer ). Result is darken, crusty chops with great flavor and moistness.   

The following is for 2 diners:

6 lion lamp chops

2 large sweet potatoes scrubbed

5 cloves of garlic

6 tablespoons evoo

1 tablespoon coarse kosher salt

1 teaspoon ground cinnamon

1 tablespoon freshly ground black pepper

3 teaspoons red wine vinegar

3 tablespoons chopped fresh basil ( we used dried this time due to no fresh on hand ) 

Prick skin of sweet potato w/fork and place in microwaveable dish. Cover and microwave on high for 13 minutes/until they are completely tender ( turn dish at 6 minutes)

In a medium bowl combine garlic, 2 tblsp evoo, 1 tblsp salt,cinnamon and black pepper. Toss each chop into rub until well coated

Grill chops per above ( my BGE took 7 minutes @550 to hit 130 degrees)

While chops are cooking in a small bowl whisk vinegar and remaining 4 tblsp evoo to make a vinaigrette. Stir in chopped basil, season to taste with salt and pepper.

When sweet potatoes are done split each down to center and scoop the flesh into bowl of food processor. Puree until smooth --salt/pepper to taste

When chops are done stir any cooking juices into vinaigrette. Set plate with chops and sweet potato and drizzle vinaigrette over lamb and sweet potato. ENJOY with a good blended red wine.

never thought about taking a picture-- if I can remember I'll do so. Have tried thi 3 times since and it's great way to have lamb. Just tried lamb burgers last night with Marzetti's Otria greek yogurt veggie dip with added cucumbers --wonderful favor
