Smokey Queso

This is a great cold cheese dip w/ quality tortilla chips - or, can be melted as well (on a BGE burger is great).

  • 4 oz. sharp cheddar cheese - grated
  • 4 oz. smoked cheddar cheese - grated
  • 1 1/3 inch slice of red onion - finely chopped.  Add to cheese
  • 4 Jalapenos seeds/meat removed (if you want a mild heat) - Finely chopped and add to cheese.
  • 1/2 bunch of cilantro - finely chopped and add to cheese.
  • 1 tablespoon real mayo (a little more if you like mayo).

Combine all ingredients to a mixing bowl - stir until mayo helps everything stick a bit.

Eat now w/ quality tortilla chips - or put it in the fridg and eat later.  Keeps well for 2 or 3 days.

Serves??  Not sure - I've seen this disappear in 1/2 an hour with 4 people.
