Superb Seafood Paella

Smoked infused rice, premade seafood stock, pre-smoked chorizo as a 'side' to keep this an all seafood offering for non-pork eaters, brined and pre-smoked chicken thighs available to add into the paella (if needed to fill the pan) but kept out in order to save space for the rice to expand and also to make up for an over-exhuberant purchase at a great fish market.

All conducted on a Large BGE with a 14" heavy commercial grade steel paella pan.   BGE charcoal and about 4 baseball sized chunks of maple soaked overnight.

Overall prep time to clean and prepare all ingredients was spread over perhaps 5 hours with a couple phone calls and a beer in between action steps.   You may completely omit my efforts to smoke a bunch of fresh chorizo, a length of Hoffman brand kielbasi, and 8 chicken thighs that I had trimmed and brined using Kosmo's Chicken/Poultry Soak for about 4 hours.  I only included those to help fill the plate in the event the paella took a nosedive, which it didn\'t but they were so freaking good that what wasn't consumed at the table was asked for and went in a set of to go containers as our guests left.

BTW; this was a dinner for 7 to celebrate our diva's return to college
