Jalapeno stuffed w/ cornbread

Fresh Jalapeno peppers
Cornbread mix, prepared using package directions


Hollow out large jalapenos and simply fill with prepared cornbread mix.

Use a pepper stand to keep vertical.  About 350 dome, indirect for 45 minutes or so.  Simple but great.

Cool, I am going to try this I have some vegetarian friends(poor bastards). Nice option along side my bacon wrapped ones.

I assume this is prepared cornbread mix, like Jiffy, prepared in the sense that it is mixed following the instructions on the box just as if you were going to bake it.

Yes we used the box cornbread mix. We have since done again adding different varieties of cheese, cream cheese, pork (already smoked) cocktail smoked sausage, onions, etc. Also did the same to a larger bell pepper, took about one hour to cook.
