Red Chile Enchilada Sauce
Description:A nice mild red chile sauce for use with enchiladas, burritos, tamales, or any southwestern dish

2 Tbsp vegetable oil
1 medium onion, finely chopped
2 cloves garlic, minced
2 Tbsp flour
3-4 Tbsp red chile powder (more = hotter sauce)
1/4 tsp ground cumin
3 cups water
Salt to taste

Instructions:Heat the oil and sautee the onion and garlic until soft and slightly brown. Add the flour and cook until the flour is browned (3-4 minutes) – be careful not to burn. Mix in the chile powder and cumin and heat for a couple minutes. Add water and bring to a slow boil, then reduce heat and slowly simmer for 15-20 minutes until desired consistency is achieved.
Notes:For a few variations you can substitute equal amounts of ancho or chipotle powders for the red chile powder. (i.e. add 2 Tbsp red chile powder and 1 Tbsp ancho powder for a total of 3 Tbsp of powder).
