BLT Steak Popovers
Description:

BLT Steak’s famous popovers as seen on FoodTV. At BLT Steak, these are served as an appetizer with butter (as an alternative to bread and butter).

If you've ever made Yorkshire Pudding in muffin tins then this recipe and technique will be very similar.

Note, you might be able to substitute a muffin tin for the popover pan, but results may vary.

Ingredients:

It is VERY important that ALL ingredients be at room temp and that the Milk and Eggs are warm in order for the popovers to rise correctly. Anything cold is this recipe's worst nightmare.

  • 4 c. milk, warmed
  • 8 eggs (warm eggs in a bowl of very warm water)
  • 4 c. flour
  • 1-1/2 heaping tbsp. salt
  • 2-1/4 c. grated Gruyère, Blue Cheese, or Cheddar (optional) (NOTE: after grating, let grated cheese come to room temp)
Instructions:

Setup: Indirect, platesetter with legs up.

  1. Stabilize EGG to 350º. Place the popover pan on the EGG.
  2. Gently warm the milk over low heat and set aside.
  3. Whisk the eggs until frothy and slowly whisk in the milk (so as not to cook the eggs). Set the mixture aside.
  4. Sift the flour with the salt. Slowly add this dry mixture to the egg mixture and gently combine until mostly smooth.
  5. Remove the 350º popover pan from the EGG and spray with nonstick vegetable spray (or brush liberally with clarified butter).
  6. While the batter is still slightly warm, fill each popover cup three-fourths full.
  7. Top each popover with approximately 2-1/2 tbsps. of the grated cheese (not too much!).
  8. Bake at 350º for 50 minutes (it may take quite a bit less than this), rotating pan half a turn after fifteen minutes, until the popovers are golden brown.
  9. Take out of oven, remove from pan, and serve immediately.
Notes:

I usually do 1/2 the recipe above for the normal 6 popover pan and fill 3/4 full.with batter. Sprinkling with cheese on top before baking can yield a variety of different textures. I've used both Gorgonzola and Monterey Jack

I'd modify this recipe and use clarified butter in place of the no-stick spray.

I've found a teaspoon of clarified butter goes a long way... It takes high heat well (since the milk solids have been removed) and it's only 60 calories

Did them in the oven, amazing. I used straight up butter (a little less than Tbs per popover) and it was too much butter as it dripped all over the oven. Still incredible. Did the half recipe with Gruyere, next time will use a more pungent cheese.
