Plano Outlaw Eggfest Brats
  • 1 Package of Original Johnsonville Bratwurst
  • 1 Large Sweet Onion (it was passed on to me that the secret to a sweet onion is “The Flatter the Onion the Sweeter it is”, I look for that one.)
  • 1 clove of Garlic
  • 1 Stick Of butter
  • Kaiser Buns
  • 1 Dark Beer (Shiner Bohemian Black Lager)

Medium Heat

Place a few Chunks of hardwood ( I use Pecan and Cherry)

Take a dutch over and place on the grid

Add 1 stick of butter to dutch oven.

Slice 1/4 inch ring slices of Onion and place in the butter. You want to caramelize the onions and garlic.

When they are ready add your favorite dark beer.

Simmer for about 30 mins. This will allow the onions and garlic to absorb that smoke.

Now place the brats on the cast iron grid until they start to spit. Cook evenly on all four sides. (Careful not to let the brats split to much)

When done add them to the dutch oven and simmer (NOT BOIL) in the dutch oven for about 20 min. I usually put a little butter in the kaiser bun and toast for a bit here.

Just before serving grill the bratwurst and then serve on the toasted Kaiser bun smothered with the smoked onions and favorite condiments.

So you are using a dutch oven, small I presume, and a flat cast iron griddle?
