Ingredients: | 2 lbs minced turkey 3 lbs leftover turkey in small pieces 2 Tbsp canola oil 3 cloves garlic minced 2 Cups coconut milk 2 cups diced onions 2 cups diced celery 6 diced jalapenos 1 cup chopped red bell pepper 1 cup chopped green bell pepper 2 tsp Indian white chili powder or 4 tsp white pepper 6 cups turkey stock 2 cans white kidney beans drained 1 can white kidney beans fresh parsley, sage and thyme |
Instructions: | Brown minced turkey, onion and celery in oil. Add garlic, green and red bell pepper and jalapeno and cook for 5 minutes. Season with salt and white pepper Add turkey stock and put DO on egg at about 300 for 30 minutes. Add chili powder, coconut milk and stir, cook for 15 minutes more. Blend 1 can of beans with about a cup of turkey stock til smooth and add to pot and stir. Add leftover turkey and remaining beans and stir. Check seasonings and correct Cook for 15 minutes more and stir in herbs, remove from egg. Serve in bowls garnished with Monterrey Jack, chopped green onions and cilantro |
