Description:reverse seared steak
Ingredients:prime New Your sirloin strip
Instructions:I bought a package of 3 large prime NY strip from Costco. Each steak is enough to feed both me and my wife . So how can we do a revers sear and not dry out the steak but yet get that great char. Plan broil on my large Green Egg with a hint of wood smoke on a low temperature about 200 t degrees until, I get an internal temperature of about 105 degrees, set aside the extra two steaks for later. Also set aside the third steak we plan to consume. Increase temperature of grill to at least 500 to 600 degrees and give the remaining steak about 2 minutes on each side looking for an internal temperature of 120 degrees. For the remaining steaks I will finish off later on my gas grill as hot as I can get it. Goal is a smokey flavor with a nice char.
