| 1 Tbs Cayenne Pepper|| 2 tspCoarse Black Pepper|
| 1 Tbs Onion Powder|| 2 tspAllspice (whole)|
| 1 Tbs Onion Flakes|| 2 tspCinnamon|
| 1/3 Cup Dried Chives|| 2 tspCoriander|
| 1 Tbs Garlic Powder|| 1 TbsGinger|
| 1 Tbs Thyme|| ½ tspNutmeg|
| 1 Tbs Light Brown Sugar|| ½ tspCloves (whole)|
| 1 Tbs Sea Salt|
|Instructions:||Place all ingredients in blender.|
Blend until fine powder.
For more authenic Jamaican "Heat" add more Cayenne Pepper, Red Pepper Flakes, or Scotch Bonnet Pepper Powder.
Rub or brush chicken or pork with olive oil.
Rub with above Jamaican Jerk Rub.
Place in zip lock bag in refrigerator for 24 hours.
